ADDITIONAL NOTES:
Marchesi Antinori's Cervaro della Sala comes from vineyards located in the grounds surrounding the Castello della Sala, located in Umbria. The name comes from the noble family that owned the castle in the 14th century, the Monaldeschi della Cervara.
It is made mainly from chardonnay and Grechetto grapes, which are harvested overnight and refrigerated to preserve their aromas, before crushing and destemming. The two varieties ripen at different times and are fermented and aged differently. Chardonnay is briefly cold macerated, for 4-6 hours, then fermented for 18 days in new French oak barriques, where it remains on its own yeasts for 6 months. Grechetto, on the other hand, ferments and ages in stainless steel. The wine is then blended and, once bottled, rests for 10 months in castello della sala's historic cellars.
