    What wine to pair with polenta? The question is quite simple: polenta, typical of northern Italy, is usually paired with a melted cheese, such as fontina or toma cheese and melted butter, and is ideal for warming up an evening with gli amici. Red wine is therefore always the best pairing, especially if it is structured enough to stand up to the dish: a Valpolicella Ripasso for example might be perfect, but a Bolgheri will also do more than well to support the flavor of the cheeses.
