Henri Champliau is a family winery producing sparkling wines in Mercurey, in the heart of the Côte Chalonnaise.
Founded by Alexandre Graffard, grandson of Henri Champliau, it offers two Crémants de Bourgogne produced following the traditional method from the noble Pinot Noir and Chardonnay grape varieties.
The Crémants de Bourgogne express finesse, lightness, intensity and precision, without weighing down the palate, with a final persistence that surprises fans. Pinot Noir clearly dominates in the assemblages, lending power and complexity. It is a singular choice that qualifies and identifies the character of Henri Champliau's wines, since Pinot Noir is difficult to cultivate, its yields are low and it is more easily reserved for the production of the renowned reds of Borgogna. Vineyard parcels are dedicated only to Crémant production, and harvests are manual, with limited yields. For his Crémants de Bourgogne, Alexandre performs delicate pressing and multiple separate vinifications in small batches before assemblages. This is followed by bottling for mousse taking, for a minimum period of 12 months.
