BOUQUET:
The nose releases memories of white-fleshed fruit, grapefruit and lemon peel, vegetable tones of celery and iodine nuances.

TASTING NOTES:
Taste of character, has soft incipit then becomes more snappy, fresh and savory, with a very long citrus and vegetal persistence.

SERVING TEMPERATURE:
Between 8 and 10 °C

FOOD PAIRINGS:
Really good for aperitifs, it adapts very well to seafood and asparagus dishes.

Production area
The 400-500 m high hills of Girlan and the proximity of the Eastern Alps give Sauvignon its intense and characteristic aroma. The grapes grow on glacial moraine soil and are harvested at optimal ripeness.

Vinification
Harvesting is done manually in small containers for transport to the winery. After a short maceration and whole cluster crushing, destemming by natural sedimentation of the must takes place. Temperature-controlled fermentation in stainless steel vats. Maturation sui lieviti fine in stainless steel tanks without malolactic fermentation for 6 months.
