Il Bruciato is among the most symbolic and famous wines of the Guado al Tasso winery, owned by the legendary Antinori family. It is a red from the prestigious Tuscan area of ​​Bolgheri, obtained from a blend of French vines, Merlot, Cabernet Sauvignon, Cabernet Franc, Petit Verdot and Syrah, which in these lands reach extremely high levels of quality. The name derives from a wood which in the 18th century was totally burned by the inhabitants of the area as a sign of protest against the noble Della Gherardesca family, lords of Bolgheri at the time, who forbade farmers to hunt inside it.
This Bolgheri il Bruciato is produced every year within the Guado al Tasso estate of the Antinori family, located about 80 km south-west of Florence, on the rolling green hills that surround the ancient village, in an area with a unique microclimate which alternates between night and day with good temperature ranges, and which allows the grapes to reach perfect maturity. The "Il Bruciato" wine is the breath of the wind, the strength of the earth and the passion of man, it is the demonstration of how these hills generate visual and gustatory emotions. The selected grapes are taken to the cellar where they are destemmed and softly pressed. This is followed by fermentation and maceration on the skins in steel at a controlled temperature for about 10-15 days. A part of the Merlot and Syrah is fermented at lower temperatures to maintain the varietal aromas and the typical taste. The malolactic fermentation takes place in steel and ends up in barrique. At the end of this phase we proceed to the union of the wines which will mature in barriques for a few months, before being bottled and aged in glass for another 4 months.
