Fermentation takes place partly in 50 hl oak barrels, partly in 300 l tonneaux and partly in steel (the percentage varies according to vintages) for about 15 days, followed by an aging period of about 8 months. Finally, the wine ages a few months in steel and 16 months in bottle before release.
