From the Cecchi cellar an amazing wine, the result of the vinification of Cabernet Sauvignon grapes mainly, to which variable percentages are added, depending on the Merlot vintage. The origin of the vineyards is always located within the territory of the Tuscan Maremma . The vinification involves the use of the traditional method in red with prolonged maceration on the skins. The alcoholic fermentation lasted a week at a controlled temperature of 25°C to which was added a period of ten days of maceration on the skins. In these two weeks, pumping over and delesage were carried out. The malolactic fermentation was carried out in steel. The refinement of the wine includes an aging phase in which the Maremma Toscana DOC Rosso spends a part in steel and a part in wood, including second and third passage oak barriques, coming from different tonneries and medium toasting.
