Straw yellow with greenish highlights.

BOUQUET:
Tropical fruit and citrus notes of bergamot immediately dominate the nose, followed by sensations of white pepper, mineral notes of flint and some hints of herbs.

TASTING NOTES:
The taste stands out with good balance, pleasant, rounded.

SERVING TEMPERATURE:
between 10 and 12°C

FOOD PAIRINGS:

This rosso wine pairs perfectly with white meats, delicate cured meats, mushrooms and soft cheeses. It is also ideal with truffle dishes, adding a refined touch to any preparation.

Harvest

The slightly late harvest usually begins towards the end of September. The
grapes are selected and harvested by hand and immediately refrigerated by bringing them to
a temperature of about 5° to be brought to the winery.

Vinification and Aging

After harvesting, the grapes are destemmed and crushed. Maceration lasts for 8 to 10 hours,
followed by soft pressing under oxygen reduction. This is followed by static clarification
of the must (natural and cold). Then the wine ferments at low temperature 14-16°C
partly in barrique and partly in steel, and then remains on its own yeasts, with
repeated bâtonnage. Aging lasts a total of 24 months to continue with at least
another 6 months in bottle
