L’uva è raccolta tutta a mano e posta in piccoli contenitori che la mantengono integra, poi viene sottoposta a pressatura soffice immediata. La successiva fermentazione avviene in piccoli contenitori d’acciaio a temperatura controllata (19° C), senza fermentazione malolattica. Anche la maturazione ha luogo in piccoli contenitori d’acciaio.

BOUQUET: il profumo è intensamente fiorito e presenta un bouquet di note di sambuco e ortica.
