DESCRIZIONE:
Tirrena è una pasta di semolato di grano duro. Semi-integrale e poco raffinata, è ricca di fibre, polifenoli e vitamine.
MATERIA PRIMA:
Le varietà dei grani utilizzati sono: Senatore Cappelli, Khorasan e Evoldur 100% Toscana.
LAVORAZIONE:
100% artigianale.
Tirrena è ottenuta seguendo un metodo di lavorazione naturale che si tramanda da generazioni.
La pasta viene trafilata in bronzo e poi essiccata lentamente in celle statiche (dalle 72 alle 144 ore) a temperature inferiori ai 38°C, per mantenerne intatte le qualità organolettiche.
Ciò conferisce alla pasta, oltre al colore nocciola, un’alta digeribilità e una straordinaria capacità di assorbire i condimenti.
È proprio questo tipo di lavorazione che rende Tirrena una pasta viva, che profuma di grano.
