Concentrated, acetified cooked must from malvasia, lambrusco and sauvignon grapes. It is aged through 7 tampings in chestnut, cherry and mulberry barrels. This product was born when the "Great Master" was tasting his vinegar and discussing with his friends about a "botticella" that was a bit special... They decided to try it at a dinner among people with "very fine palates..." That slightly sour taste and different consistency from the others made the convivial people fall in love with it. We have been offering this vinegar to you ever since. Given the fantastic balance achieved between density, acidity and sugars, we recommend using it as a "enhancer" of flavors by pouring it directly on dishes when they are already on the table. It goes excellently with grilled meats and vegetables, crudities in all facets and is also great on Parmesan cheese.
