DISTILLAZIONE: Il vino bianco ottenuto dal mosto, viene distillato a fuoco diretto con alambicco Charentais (tipo di alambicco discontinuo) per due volte. Nella prima cotta si ottiene il brouillis, un liquido che ha una gradazione alcolica intorno ai 28-30 °C, mentre nella seconda la bonne chauffe, che arriva a raggiungere i 70,5 °C. Dopodiché l'acquavite viene sottoposta a un periodo di invecchiamento in botti di quercia francese, per il 90% provenienti da Limousin, selezionate dai maîtres de chais, Christophe e Pascal.
