Production area
The grapes chosen for this extraordinary wine come from the Girlan area in the Oltradige hills, at an elevation of 450 to 500 m above sea level, from several vineyards between 15 and 20 years old. The training system is guyot. The production soil is rich in mi-nerals, formed by sediments from the Ice Age.
Vinification
The harvest is done manually in small containers for transport to the winery. After soft whole cluster crushing, sfecciatura by na-tural sedimentation of the must takes place. Fermentation takes place in 12- and 15-hl French oak barrels with subsequent malolactic fermentation. Aging on the fine lees in barrel lasts 12 months followed by 6 months in bottle.
