Tilio is a sparkling wine born from the continuous research and innovation in the Charmat method of the Foss Marai winery, which takes shape in the experimental work of the "Club dei Saggi", experts who carry out various phases of "blind" tasting tests with the aim of developing new products obtained from indigenous yeasts.

Foss Marai makes this bubbly starting with a careful selection of chardonnay grapes to which a variable percentage of fine Bombino Bianco grapes is added. The first fermentation takes place slowly in steel tanks through the action of a specially selected indigenous yeast, while the second takes place in autoclaves according to the winery's more than 30 years of experience in using the charmat method. At disgorgement, no sugars are added at the dosage stage, from which a natural dosage zero sparkling wine is born.
