BOUQUET:
With great olfactory concentration, thanks to the presence of ripe red fruit that leads back to notes of jam, but also spices, vanilla and licorice.

TASTING NOTES:
In the mouth the wine is characterized by a dense and elegant texture, also supported by the important acidity of the Sangiovese, the tannins are absolutely sweet and the finish long and very persistent.

SERVING TEMPERATURE:
between 18 and 20°C

FOOD PAIRINGS:

Excellent with cured meats and savory meats, with succulent dishes and aged cheeses. Much appreciated in combination with Tuscan Pecorino and Parmigiano.

This is Castellare's most important Cru, a pride of the Chianti winery for demonstrating the greatness of Sangioveto blended with Malvasia nera: the 1985 vintage ranked 6th in the first Top 100 compiled by Wine Spectator in 1988.

Castellare di castellare di castellina's I Sodi di s. niccolo', is one of the few Italian Supertuscans made exclusively from native GRAPE: 85% Sangioveto and 15% Malvasia Nera. The origin of the name comes from the word used by Tuscan peasants to describe those soils that had to be worked by hand, as they were too hard (precisely sodi) or too steep to allow the use of oxen. San Niccolò, on the other hand, is the name of the 14th-century church that stands on the Castellare property around which are some of the most vocated vineyards. On the label is the iconic little bird, which has always been present on Castellare's rosso wines, a symbol of the daily commitment to sustainable viticulture that the winery has been pursuing for more than 40 years.
