Once vinified according to the metodo classico method, the sparkling wine rests for a period of 24 months on sui lieviti inside the tunnel dug into the lava flow.

Etna's terroir with its mesoclimate and sandy soils of volcanic origin offers ideal conditions for the cultivation of Nerello Mascalese. This grape variety, endemic to the volcano, naturally lends itself to sparkling wine making and Firriato's metodo classico thanks to its high levels of malic acidity. Thanks also to a low level of anthocyanins, from which the wine's deep red color derives, it is possible to proceed with remarkable results to a rosé sparkling wine process. Following manual harvesting, whole grapes are softly pressed by pellicular maceration in the press for a short time, one to two hours. The combination of etna's pedoclimatic characteristics, characterized by high temperature ranges between day and night, exposure to sunlight typical of the mediterranean belt and rich soils, contribute to the development of grapes that are characterized by the intensity of aromas and aromatic finesse that are enhanced by sparkling. Fruity aromas of high intensity of strawberry and berries, light floral notes, especially violet. A well-balanced sparkling wine with high structure, good acidity, extremely prolonged aromatic persistence. A metodo classico rosé that stands out in the national panorama for the typicality of the indigenous variety used, capable of telling the story of a unique terroir such as that of Etna.
