FOOD PAIRINGS:

Wine goes well with our traditional pastries , but especially fresh fruit tarts, a mille leaves with custard.

Wine also for meditation and after dinner.

ADDITIONAL NOTES:

From Barbera grapes with natural drying of the fruit on the vine. The vineyards are located on south-facing slopes with limited water retention capacity. Ripening is accelerated in the final stage due to thermal accumulations and water scarcity. The characteristics of the variety, climate and soil allow in-plant over-ripening of the grapes.
Vinification takes place in steel with long macerations of 15-18 days at a temperature of 25 °C. This is followed by malolactic fermentation and a 6-month aging in barriques.
