WINEMAKING AND AGING
Dedicated to the famous English admiral Horatio Nelson, who in the late 18th century used to use marsala to supply his fleet, considering it a drink with special healing benefits.
Harvest time in the second ten days of September, at advanced ripeness. White vinification at 20°- 22°C. Fermentation is arrested by addition of neutral alcohol. Afterwards, cooked must is added. Aged for 36 months in 50hl oak barrels.
