The best of elena walch's white varieties with predominantly chardonnay.

Chardonnay takes the lead in this blend. The harvest date of the different grapes, the percentage of which may vary slightly from year to year, is determined by the optimal ripeness of the Chardonnay. Since it is a blend, the harvesting and processing of all the grapes takes place together and on the same day. After fermentation, a weekly "battonage" is performed for 3 months. The wine matures in French barriques for approx. 10 months, followed by further aging in the bottle for at least 6 months.
