Straw yellow color with golden reflections, animated by a very fine, intense and persistent perlage.
BOUQUET:
The aromas unfold in variegated succession starting with notes of citrus and white-fleshed fruit and moving on to variations of aromatic herbs (mint) and woody scents (fern, resin) to touch even spicy hints (ginger, cardamom).

Its aromatic richness and gustatory/tactile versatility make it a bubbly for the whole meal, capable both of enhancing and exalting itself with appetizers and tasty first courses, particularly seafood and shellfish, and of pursuing its vocation as a stimulant on preparations of particular texture (large or tight-fibered fish, white meats), of decisive salinity (blue fish, caviar) and of intriguing aromaticity (spicy foods). Curious and unpredictably enjoyable pairing with traditional Italian recipes with a higher presence of fats and sauces.

ADDITIONAL NOTES:
The clusters of the three varieties come from vineyards specifically dedicated for sparkling grapes located in medium/high hills. Overnight rest in cold storage (for Chardonnay and Pinot Noir) and the subsequent delicate pressing phase to obtain a high quality must is followed by targeted and careful vinification. Fermentation takes place separately by variety, in steel at a controlled temperature of 14-16 °C, followed by aging on the yeasts for several months. The blending of the various wines is then carried out with the addition of the liquer de tirage, bottling and horizontal placement in the modern maturation cellar at 11 to 12 °C for the second fermentation and resting on sui lieviti for a minimum of 38 months. At the dégorgement stage there is no addition of actual liqueur d'expedition but only topping up with wine from other bottles so as to ensure a product without added sugar.
