The aromas unfold in varied succession starting from the notes of citrus and white pulp fruit to move on to variations of aromatic herbs (mint) and woody scents (fern, resin) to also touch spicy scents (ginger, cardamom).

The aromatic richness and the gustatory/tactile versatility make it a bubbly for the whole meal, capable both of exalting and exalting itself with appetizers and tasty first courses, in particular with seafood and shellfish, and of pursuing its vocation as a stimulant on preparations of particular consistency in texture (large-sized or tight-fibered fish, white meats), decidedly salinity (blue fish, caviar) and intriguing aromas (spicy foods). The combination with traditional Italian recipes with a greater presence of fats and sauces is curious and unexpectedly pleasant.

ADDITIONAL NOTES:

The bunches of the three varieties come from vineyards specifically dedicated to sparkling wine grapes located on medium/high hills. The overnight stay in the cold room (for Chardonnay and Pinot Noir) and the subsequent phase of delicate pressing to obtain a high quality must is followed by a targeted and careful vinification. Fermentation takes place separately by variety, in steel at a controlled temperature of 14-16 °C, followed by aging on the lees for several months. The union of the various wines is then carried out with the addition of the liquer de tirage, the bottling and the horizontal arrangement in the modern maturation cellar at 11-12 ° C for the second fermentation and the stop on the lees for a minimum 38 months. In the dégorgement phase there is no addition of real liqueur d'expedition but only topping up with wine from other bottles in order to guarantee a product without added sugar.
