Chardonnay (75%) and Pinot Noir (30%), from the best estate vineyards, many of which are planted with a high density.

SURRENDER
9,500 kg of grapes per hectare, with a must yield of 40%, equivalent to 5,060 bottles per hectare.

VINIFICATION

Soft and progressive of the bunches with fractionation of the musts; alcoholic fermentation in steel vats and refinement of the best parcels in oak barriques, where they mature for 6 months in contact with the lees.

MATURATION
Preparation of the cuvée in the spring following the harvest, exclusively with the wines of the vintage. Second fermentation in the bottle and subsequent aging in contact with the lees for at least 36 months, followed by another 3 months after disgorgement.
