Intriguing as an aperitif, it pairs well with fish appetizers, particularly if rosé-colored, such as salmon, shrimp and prawns, offering its best also on an entire meal with elaborate seafood dishes. Interesting on oriental cuisine dishes and generally on spicy courses.

ADDITIONAL NOTES:
Rosé vinification of Pinot Noir grapes, with brief maceration of the skins and subsequent soft pressing, the latter also reserved for Chardonnay grapes from vineyards with a high sparkling wine vocation. Fermentation is conducted separately for the two varieties at a controlled temperature of about 15-16°C. In the year following the harvest, after the cuvée is formed and the liqueur de tirage is added, the second fermentation takes place in the bottle at a cellar temperature of 11-12°C with the wine remaining in contact with the yeasts for an average of 24 months before being disgorged and subsequently put on the market.
