High-altitude whites amid tufaceous Umbrian hills and Renaissance savoir-faire

Within the 15th-century walls of the Castello della Sala, the Antinori family transforms the breezes of theUpper Paglia Valley into white wines of refined minerality. Chardonnay, Grechetto and Sauvignon ripen on tufaceous, clay soils at more than 400 m (1,500 ft), giving bright aromas and a savoriness reminiscent of wet stone.

    • Reference labels - Cervaro della sala (Chardonnay & Grechetto), Bramito Chardonnay in purity, Conte della Vipera Sauvignon & Sémillon.
    • Unique terroir - altitude, marked temperature ranges and volcanic soil create long-lived whites capable of evolving complexity.
    • Cellar style - soft pressings, barrique fermentations only for the best plots, bâtonnage on the end to broaden the flavor texture.
    • Acknowledgements - Cervaro della Sala awarded several times with Tre Bicchieri by Gambero Rosso and cited among the best Italian whites by guides such as Wine Advocate and Wine Spectator.
    • History and heritage - Castello della Sala, erected in 1350 and acquired by the Antinori family in 1940, represents one of the symbols of the rebirth of great Umbrian whites.
    • Umbrian food pairings - Nera trout with herbs, strangozzi with truffles, pecorino di Norcia and veal carpaccio tonnato.
