Intriguing as an aperitif, it goes well with fish appetizers, especially if pink in color, such as salmon, prawns and scampi, offering its best even on a whole meal with elaborate seafood dishes. Interesting on oriental cuisine and in general on spicy dishes.

ADDITIONAL NOTES:

Rosé vinification of Pinot Noir grapes, with brief maceration on the skins and subsequent soft pressing, the latter also reserved for Chardonnay grapes from vineyards with a high sparkling wine vocation. Fermentation is carried out separately for the two varieties at a controlled temperature of around 15-16°C. In the year following the harvest, after the formation of the cuvée and the addition of the liqueur de tirage, the second fermentation takes place in the bottle at the cellar temperature of 11-12°C with the wine remaining in contact with the yeasts for an average of 24 months, before being disgorged and subsequently put on the market.
