Production area: Salento, Puglia, at about 100 m above sea level, with average high temperatures and low rainfall. The soils are medium-textured, basically sandy, with a depth well below one metre.
Vinification and Aging: Thermo-controlled maceration and alcoholic fermentation with selected yeasts for about 10 days. Aging in steel.
