It goes splendidly, at the end of a meal, with mature cheeses and dry pastries; it can be tasted as a meditation wine. Excellent with Christmas sweets, it is perfect with gingerbread.

Selection of the grapes in the vineyard and drying in dry and well-ventilated rooms until January-February. Soft pressing, light maceration on the skins and fermentation at controlled temperature initially in steel and finished in small oak barrels. The aging continues in wood for about 12 months on its lees with periodic " battonage " operations.
