Marchesi Antinori's Muffato della Sala comes from the Castello della Sala estate near Orvieto, Umbria.
It is made from sauvignon blanc, Sémillon, Grechetto, Traminer and riesling grapes, harvested and selected entirely by hand after the clusters left to dry on the vine have been attacked by the noble rot, Botrytis cinerea. Fermentation takes place in stainless steel tanks at a controlled temperature of about 17°C for 18 days. The wine then ages for 6 months in French oak barriques before bottling.
