Soft rosso, with slightly orange highlights.

BOUQUET:
Aromas are reminiscent of winter underbrush, red fruits such as ripe cherry and plum.

TASTING NOTES:
It is soft and persuasive on the palate. Its tannins are balanced. It is a pleasantly structured and warm wine.

SERVING TEMPERATURE:
between 17 and 18°C

FOOD PAIRINGS:

It goes well with elaborate dishes, pasta dishes with seasoned pasta, even just with
tomato sauce. Excellent with white meats and fish such as tuna and swordfish.

ADDITIONAL NOTES:

Crocevento vineyard, Caprino Veronese estate, Monte Baldo, inland from Lake Garda. Single-body plot, lying on the southeast-facing slope of Spiazzi hill, at an elevation of 700 meters above sea level. The soil is mainly rocky-limestone with a good component of organic loam of a sedimentary nature TYPE. The training system is Guyot, with a planting density of 6,500 cp/ha and a yield per hectare of 60/70 quintals.

Harvest time is between late September and early October. Harvesting is manual: the grapes are picked in crates to maintain the perfect integrity of the bunches. The grapes are destemmed and crushed. Vinification follows with fermentation of about 15 to 20 days at a controlled temperature (20° C), with selected yeasts. After the first racking, aging begins in barrique for about 18 months. This is followed by 12 months in bottle.
