The combination is ideal with important red meat dishes and medium or long-aged cheeses, but it can also pleasantly accompany after-meal conversations.

ADDITIONAL NOTES:

Following tradition, Barolo Mirafiore is produced by combining wines from different vineyards. The choice of vineyards can vary according to the characteristics of the vintage. The assembly takes place as soon as the malolactic fermentation is completed. The long maceration and the reduced decanting carried out during the refinement allow to anticipate the development of tertiary aromas even before bottling.

The fermentation is traditional, carried out in stainless steel vats, with a duration of 12-15 days at a controlled temperature. This is followed by a permanence of the wine on the skins in a "submerged cap" for a further 30-40 days, to optimize the extraction of the polyphenolic substances.

Mirafiore's Barolo Mirafiore DOCG belongs to the series of "reserves", produced exclusively in the most suitable vintages and which give life to wines that sublimate the qualities of the Nebbiolo grape, therefore wines which, although wonderful even now, boast great potential for aging.
