APPEARANCE:
Straw yellow, with typical cloudiness.
BOUQUET:
Intense citrus and yellow fruit notes, accompanied by memories of bread crust, dried fruit and yeast. More complex and spicy aromas emerge with time, due to prolonged contact with yeast.
TASTING NOTES:
Fresh and fruity. Savory and slightly bitter finish, with a good mineral sensation.

Between 4 and 6 °C
FOOD PAIRINGS:
Excellent with cured meats and cheeses, as well as with white meats, fish dishes, pizza and risottos with tasty vegetable sauces.
ADDITIONAL NOTES:
In the winery, hand-picked grapes are softly pressed and an initial, slow, temperature-controlled fermentation then begins in steel tanks using selected yeasts.
This is followed by a second fermentation, known as "presa di spuma," in the bottle, with the addition of selected yeasts and sugar.
