Maturation of the wine in vitrified cement tanks - ''Tulipes,'' for at least 12 to 15 months. During maturation, the wine remains in contact with fine lees, through weekly bâtonnage, to enrich itself in structure and complexity. After bottling, the wine rests for several months in glass before release.
A wine of absolute longevity, Over the years, a still distinct acidity lingers, and tertiary notes of elegant hydrocarbon develop, with a wonderful tension toward herbaceous nuances, which help make Calvarino intriguing. Calvarino's older vintages are highly sought after.

Straw yellow with bright reflections, greenish when young, golden after aging.
BOUQUET:
Fresh, mineral and floral bouquet. Presents a broad bouquet with hints of elderflower, herbs, lemon apple, pear and yellow peach, on the finish crisp cherry, almond and elegant citrine notes. Important mineral note of flint.
TASTING NOTES:
Straightforward and vertical sip. Fresh, elegant and savory, well balanced, long and persistent.

Eclectic
in its pairings, ideal from aperitif to the whole meal with dishes of good fatness and sweet tendency, such as a cheese soufflé or creamy risotto. Perfect with vegetable flans, delicate fish, shellfish and homemade stuffed pasta or pappardelle with a delicate courtyard ragout.

ADDITIONAL NOTES:
It is made mainly from garganega grapes and from Trebbiano di Soave grapes, harvested strictly by hand with double passage to select only the ripest grapes. Once destemming and pressing have taken place, the free-run must ferments at a controlled temperature of 16-18°C in vitrified cement tanks. Afterwards, the wine matures in the same tanks for about a year, remaining in contact with the fine lees to enrich itself in structure and complexity. After bottling, it rests in bottle for several months before release.
