Ben si adatta a secondi a base di pesce al forno, è ottimo con il baccalà. Da provare in abbinamento a un pesce spada cucinato alla pantesca.

Isesi delle Cantine Pellegrino è un bianco prodotto interamente con uve Zibibbo coltivate ad alberello pantesco, patrimonio Unesco, su terreno ferroso di origine vulcanica, nell'isola di Pantelleria. I vigneti sono situati nelle contrade Sibà, Mueggen, Barone, Khamma.

I grappoli sono vendemmiati manualmente nella prima decade di settembre. La vinificazione si svolge con pressatura soffice delle uve, cui segue una lunga fermentazione condotta a bassa temperatura. Affina per 12 mesi in acciaio sulle fecce fini.
