ADDITIONAL NOTES: Maceration takes place in stainless steel tanks for 10–15 days, during which the *délestage* technique is regularly applied. This is followed by maturation in new 225-liter French oak barrels for 15–20 months. The wine is then bottled and undergoes a long period of bottle aging.
