FOOD PAIRINGS:
Cadence is perfect for a complete meal, from aperitif to dessert. The wine is ideal with white meats, such as poultry supremes with morel mushrooms, and fish in sauce, such as cod in a walnut and Comté crust. Serving temperature: 8-10°C.

ADDITIONAL NOTES:
Light pressing a few hours after harvest at 200 kg/100L (vs 150 kg/100L according to Crémant de loire appellation and vs 160 kg/100L according to Champagne appellation) to keep the best of the precious first juices.
