APPEARANCE: Soft pink, may vary slightly from vintage to vintage due to the varying degree of phenolic maturity of Pinot Noir.
BOUQUET: Complex, fragrant and lively bouquet, with marked notes of berries, ripe fruit, denoting a pleasant vinosity, due to the presence of Pinot noir also in the liqueur d'expedition.
TASTING NOTES: Full, velvety, smooth, with pleasant body.
SERVING TEMPERATURE: Between 6 and 8°C
FOOD PAIRINGS:
Excellent as an aperitif, because of its vinous structure it is recommended paired with a variety of dishes: cured meats, savory meats, sauces, medium-aged cheeses, shellfish. It goes well with desserts of an acidic tone (strawberries or blueberries) and fresh fruit salads.
ADDITIONAL NOTES:
Soft, progressive pressing of the clusters with fractionation of the musts; alcoholic fermentation in steel vats. Maceration for several hours of the Pinot Noir in contact with the skins (maceration in pink) gives color and aromas typical of the variety.
Preparation of the cuvée in the spring following the harvest, with the addition of 10% of reserve wines from the best vintages. Second fermentation in the bottle and subsequent aging in contact with its own yeasts for at least 24 months, followed by another 2 months after disgorgement.
