GRAPE VARIETIES:

WINEMAKING: The pinot noir grapes are chilled to a temperature of 12 degrees and fed whole into the press where they macerate for about 12 to 13 hours. At the end of maceration, a soft pressing takes place and the resulting must rests in steel tanks at a temperature of 5/6 degrees for 24 hours before being racked. At this point fermentation is triggered. The wine is kept in contact with its fine lees until the following spring, and in the month of May, it faces a second fermentation, in the bottle, followed by a 60-month maturation process on the yeasts, in the cool, dark, and protected environment of the cellars, in deference to the strictest rules of Spumante Metodo classico.

APPEARANCE:
Sparkling wine with a soft pink color with onion skin reflections.
BOUQUET:
The bouquet is reminiscent of orange blossom aromas, chinotto pomegranate fruit and black plum, ending with ginger, nutmeg lavender, basil and an undertone of custard.
TASTING NOTES:
In the mouth, the bubble is fine and persistent and the acidity is in balance with the sweet note. A mineral and savory sensation finishes with a citrus aftertaste.

between 6 and 8°C
FOOD PAIRINGS:
Excellent as an aperitif, but thanks to its undisputed personality, it is above all an excellent way to accompany all courses with class.
