GRAPE VARIETIES: 50% Chardonnay e 50% Sauvignon Blanc
The varietals that make up Vespa Bianco ferment separately, approximately 50% in temperature-controlled stainless steel tanks and the remaining 50% in 5- and 40-hectoliter oak barrels. Once fermentation is complete, retaining most of the yeasts, a long period of "batonnage" begins, followed by bottling. Bottle aging completes the wine before release.

APPEARANCE: Even when young, its color offers nuances of yellow and gold with ancient reflections, very bright and extraordinarily clean.
BOUQUET: On the nose, notes of wax, apricots in alcohol, broom, and honey give the wine an immediate fresh yet structured impact. Its incredible minerality elevates it vertically and gives it extraordinary freshness.
TASTING NOTES: On the palate, all the complexity, enveloping texture, silkiness, and structure of the wine unfold with finesse and elegance, creating sensations of caressing voluptuousness. Incredible when aged for several years (ten or more).
SERVING TEMPERATURE: between 10 and 12°C
FOOD PAIRINGS: A wine that pairs perfectly with shellfish and shellfish, but also pairs well with any type of white meat and richer dishes (even smoked). Unforgettable when enjoyed alone.
