TASTING NOTES:
well-structured, full, slightly acidic, harmonious, savory with a bitter background. The addition of a percentage of the cuvée from the previous VINTAGE, aged in wood, gives this sparkling wine its characteristics of roundness, structure and longevity.

An ideal wine as an aperitif; perfect with oysters and other raw or cooked seafood, it also pleasantly accompanies hors d'oeuvres and fish-based first courses. Especially good in combination with shellfish.

ADDITIONAL NOTES:
Consistent with its continuous and inexhaustible "Quest for Excellence" even in its Piedmontese soul, the Banfi winery has believed in the Alta Langa project from its very first steps.
In fact, Banfi was one of the seven companies that accepted the bet of starting a production of quality metodo classico sparkling wines in Piedmont since the early 1990s, thus claiming the Piedmontese roots of the Italian sparkling wine sector. The project followed over the years and in 1997 the "Cuvée Aurora" was born, precisely with the intention of evoking the idea of a new frontier, a new "aurora" of quality Metodo classico production in Piedmont.
The "Cuvée Aurora Alta Langa DOCG Banfi" project is, therefore, the best calling card of the Banfi piemonte winery, which tells a Metodo Classico interpretation of Piedmont "par excellence and of excellence."
CUVÉE COMPOSITION:
Pinot Noir (minimum 70%) and Chardonnay (maximum 30%) hand-picked and sourced exclusively from vineyards cultivated in the high hills of Piedmont, in a specific area of the provinces of Cuneo, asti and Alessandria.
PRODUCTION TECHNIQUE:
Soft pressing of the grapes is followed by static clarification of the must, which is subjected exclusively to temperature-controlled fermentation (17° C). The cuvée is composed of at least 90% from the wine thus obtained and the remainder from the wine of the previous VINTAGE, aged in barriques of French oak. Fermentation takes place in the bottle according to the Metodo classico, with a protracted stay on sui lieviti for at least 40 months. Traditional remuage on pupitres and dégorgement à la glace. The sugar dosage is Extra Brut, around 4 g/l. An ideal aging in botti-glia follows.
