The grapes are hand-harvested and placed in small containers to keep them intact. The grapes are then destemmed and fermented at a controlled temperature (28-30°C) in small steel and concrete vats, where malolactic fermentation takes place. Aged in oak barrels of various sizes and partially in concrete vats for at least 6 months.

BOUQUET: on the nose, the bouquet is fragrant with violets, blackberries, and cherries, accompanied by herbaceous notes.

TASTE: a pleasantly full palate of ripe cherry, raspberry, bittersweet cocoa, and liquorice. The tannic structure merges with spicy tones, offering a wine with a persistent finish.

SERVING TEMPERATURE: between 16° and 18°C

FOOD PAIRING: excellent with many South Tyrolean dishes, particularly with game, venison, medium-rare red meats, and aged, piquant cheeses.
