BOUQUET:
The nose is markedly fruity: reminiscent of raspberry, cherry, morello cherry and currant.

TASTING NOTES:
A distinctive spicy texture also emerges on the palate, supported by an elegant acid contribution and a solid structure.

SERVING TEMPERATURE:
between 18 and 20°C

FOOD PAIRINGS:
Pair with an octopus stew, or with a fish stew enriched with olives and herbs.

ADDITIONAL NOTES:
Vinification begins with cold maceration for two days at 10°C in order to encourage greater extraction of aromas from the skins. Spontaneous and very slow fermentation starting at 16° C. up to 24° C. for a duration of about 15 to 18 days, with submerged cap and periodic délestages* to oxygenate the yeasts. A further maceration phase takes place on the skins, post-fermentation, for another 12 to 15 days, to extract as much tannin as possible, since this is a variety with tannins that tend to be very sweet and never in excess. Aged in cherry tonneaux only for a small fraction that varies from 15 to 20% of the total, depending on the vintage, while the remainder is kept in stainless steel tanks.
