BOUQUET:
Intense bouquet with good persistence, with fruity notes of currant, blueberry and morello cherry, cardamom and cinnamon.

TASTING NOTES:
Soft and warm palate, with good tannic texture and return of the spicy notes of black pepper on the finish.

SERVING TEMPERATURE:
between 16 and 18°C

FOOD PAIRINGS:
Perfect to accompany grilled tuna steak.

ADDITIONAL NOTES:
Vinification in Rosso with periodic punching-down (23 per day) to ensure higher extract and tannin content. Tumultuous fermentation continues for 10-12 days at a temperature of 2628° C. with a succession of several "délestages," especially in the early stages of vinification. After careful racking, with handling of the drained pomace only by gravity, malolactic fermentation in steel follows. Aged in barriques for 8-12 months and 6 in bottle.
