GRAPE VARIETIES:

Petite Arvine 60%, Pinot Grigio 20%, Chardonnay 20%.

Fermentation takes place partly in 30-hectoliter oak vats and partly in 300-liter French oak barriques. The wine matures in wood on the yeasts for about a year and is aged for 18 months in the bottle.

APPEARANCE:
Light straw yellow in color with light greenish highlights.

BOUQUET:
Elegant and intense, it seduces the nose with floral scents, mountain herbs, fragrances of citrus, lime, grapefruit, aromas of white-fleshed fruit, green apple, peach and subtle spicy nuances.

TASTING NOTES:

The palate is rich, with a sip of ripe, complex aromas crossed with a clear vein of mineral freshness. The finish is savory with good flavor persistence.

between 10 and 12 °C

it needs oxygenation to open up completely and develop its intense and complex aromatic complement at its best

The winery's philosophy is to follow the values of past generations by enhancing the terroir with great respect for traditions, but with an eye toward the innovations, both in the vigna and in the cellar, that the future reserves to make the potential of this unique mountain territory express itself to the fullest. The vineyards are all located between 600 and 900 meters above sea level, most of them in the Aymavilles area, where the hillside offers a panoramic view of the medieval tower, which has become an evocative tasting point. Since 2016, a new tasting room called emotional has been built next to the historic winery, to which it is structurally linked. The Wine Refuge, it was so named because of its location among the high altitude mountains.
