ADDITIONAL NOTES:
Manual harvest and selection of grapes, with subsequent drying for 3 or so months in well-ventilated fruit lofts. Fermentation in steel for 25 days at a temperature of 25/30°. three years of aging in 35-hectoliter Slavonian oak barrels. Appassimento of grapes is a unique method of Valpolicella Classica, which has always characterized the production of the great wines of this territory such as Amarone, Ripasso and Recioto. Over the centuries this technique of drying the best grapes for a hundred days on the Arele, so called the bamboo trellises, has been preserved in a solid tradition, which has made this technique the production excellence of Valpolicella. The Tommasi family guards the authentic character of this method, keeping the uniqueness of Appassimento intact. Vigneto la Groletta has always been a symbol of Valpolicella classico. The vineyard's excellent exposure enjoys the sun's rays and constant breeze from Lake Garda. The microclimate is the result of an extraordinary combination of factors, unrepeatable in other areas of Valpolicella. These soils are ideal for the activation of typical aromatic precursors, where fruit strength and darker spices prevail. La Groletta's Amarone is distinguished by its audaceous structure. It is structured, elegant and full-bodied, and well suited to bottle aging.
