Vineyards of the “Le Civaie” estate in Sirmione, between Pozzolengo and Desenzano del Garda, at an altitude of approximately 100 meters above sea level.

APPEARANCE: Straw yellow with greenish reflections.
BOUQUET: The nose is immediately dominated by notes of tropical fruits and citrus bergamot, followed by sensations of white pepper, mineral notes of flint and some hints of aromatic herbs.
TASTING NOTES: On the palate, is distinguished by a good balance, pleasant and round.
SERVING TEMPERATURE: between 10 and 12°C
FOOD PAIRINGS: Ideal when served as an aperitif and paired with appetizers or lake fish. Also excellent with pasta dishes with rich sauces, with white meats, with soft cheeses such as robiola, formaggella, and fresh goat's cheeses or "Primosale".

Harvest
The harvest usually begins in the first week of September. The grapes are selected, picked by hand, and immediately chilled to 5°C before being brought to the cellar.
Vinification and Aging
After harvesting, the grapes are destemmed and crushed. Maceration lasts 8–10 hours, followed by soft pressing. Static clarification of the must occurs (naturally and coldly). The wine ferments at a low temperature of 14°–16°C and remains on its lees for approximately 5 months, with repeated batonnage, until bottling. It then ages for 2 months in the bottle.
