CHARACTERISTICS:

Distillate made from d'Ente plums, the same variety used for the renowned Agen plums. The plums are gently pressed to avoid excessive bitterness and preserve their aromatic integrity.

Fermentation takes place solely through the fruit's natural sugars, without the addition of yeasts or additives, and the resulting fermented product undergoes double distillation in traditional charentais stills. Only the "coeur de chauffe," the purest and finest part of the distillation, is selected for subsequent maturation.

This is followed by aging in steel vats and then in oak barrels for 12 months, giving the drink soft, slightly vanilla notes and an elegant roundness.

TASTING NOTES:
The nose offers intense aromas of ripe plum and sweet almond, while the palate is balanced, round and delicately spiced, with a lingering, harmonious finish.
