PRODUCTION METHOD:

Pommeau de Normandie is made by blending Calvados A.O.C., aged for at least one year, and fresh apple must. The must, obtained immediately after pressing and before fermentation, is blended with Calvados with progressive additions of aquavit, until an alcoholic strength of about 18% is reached. This is followed by aging in oak barrels for about 30 months, during which the final ALCOHOL CONTENT settles at around 17%.

CHARACTERISTICS:

Pommeau ages in 400-liter medium-toasted oak barrels, previously used for a few years, so as to maintain a lively interaction between wood and liquid. During aging, the oak contact gives structure, roundness and aromatic complexity, without covering the natural freshness of the apple.

TASTING NOTES:

Color: Light and bright mahogany.
Nose: Rich and refined, with hints of ripe plum, candied citrus, dried fruit (almond and hazelnut) and a touch of vanilla.
TASTING NOTES: Soft and enveloping, with aromas of tarte tatin, toasted hazelnut and toffee. The finish is long and pleasantly fruity, with delicate notes of cherry and caramel.

PAIRINGS:
Perfect as an aperitif served chilled, or as an accompaniment to blue cheeses, foie gras and fruit- or chocolate-based desserts.
