Natalie Chiu is Japanese and her husband Charlie Winkworth-Smith is English. They met at the University of Nottingham, where they were both pursuing a PhD in flavor chemistry; but apart from that, what else could they have in common? The answer is very simple: their passion for tea. While Natalie has tea with lunch, Charlie drinks it in the afternoon, with characteristic British punctuality, right after lunch. This, combined with Natalie's intolerance—she feels unwell whenever she drinks alcohol—led this couple to come up with new alternatives. Thus, Saicho was born, a project based on the production of non-alcoholic sparkling drinks with tea in its various expressions as the base.
