This Prosecco di Valdobbiadene Superiore Brut "Cuvée del Fondatore" Valdo reveals itself to the eye with a straw yellow color, crossed by some more golden streaks.

BOUQUET:
The grain of the perlage is fine, and the persistence is long-lasting. The range of notes that surrounds the nose has touches of ripe white pulp fruit, enriched by hints of vanilla and light references to hazelnuts.

TASTE:
In the mouth it is medium bodied, velvety and creamy, with a sip that brings out a fruity and fresh soul to the taste.

It goes perfectly with many varieties of fish, starting from sea bream or sea bass fillets, to sweet molluscs such as scallops, or crustaceans such as prawns and scampi.

The Brut Prosecco di Valdobbiadene Superiore "Cuvée del Fondatore" Valdo is a vintage bubble that represents the top quality of the entire production of the cellar. The vinification is particular, and provides for the Chardonnay a wooden processing that helps to give the final blend - where the undoubted protagonist remains the Glera - a certain character, enhancing the scope and breadth of the perlage in the mouth. An original and intense profile is also perceived on the nose, in which the spicy and buttery notes bring back the period of rest in wood and on the lees. The "Cuvée del Fondatore" signed by Valdo is a Prosecco di Valdobbiadene Superiore Brut that comes from a blend where, alongside 90% of Glera, we also find a small percentage of Chardonnay. We find ourselves on soils mainly composed of clay on a subsoil of sandstone marl, at a height of about 250 meters above sea level. The grapes are harvested in the second half of September, manually, and the grapes obtained by destemming the bunches are softly pressed. The first fermentation takes place in steel tanks, with a stop in wooden barriques for the Chardonnay; the subsequent second fermentation takes place in an autoclave, according to the "long" Martinotti method, for a total of 12 months on the lees. After bottling and before being marketed, the Cuvée rests in glass for another six months.
